Red Pepper Coconut Soup

Ingredients

14 oz coconut milk

28 oz fire roasted red pepper

1 tbs olive oil

1 tbs sesame oil

1 tbs peanut butter

3 tbs white miso

½ cayenne pepper

¼ tsp nutmeg

1 tsp dijon

1 tbs fig spread

Preparation

  1. Add all ingredients to blender

  2. Blend until smooth

  3. Heat to boiling

  4. Blend with immersion blender for desired consistency
