Whiskey Dubliner Cheese Sauce

4 quarts


Slightly challenging


4 oz grass fed butter

4 os fontina

4 oz white cheddar

4 oz dubliner

4 oz cream cheese

2 oz parmesan

1 qt whipping cream

2 cups whole milk

1 tsp kosher salt

1 tsp black pepper

½ tsp nutmeg

½ cup flour

1 shot whiskey


  1. In a large pot melt the butter on medium high heat.

  2. Whisk in the flour, salt, pepper, nutmeg together until the butter starts to clump into a paste.

  3. Add cream and milk.

  4. Heat to medium high and start adding shredded cheese.

  5. Once all cheese is melted, add whiskey and dijon.

  6. Melt until gooey and sauce is ready
